Located high on a hill in the heart of Hunter Valley Wine Country, Bimbadgen is a striking winery and vineyard encompassing an expansive Cellar Door, award-winning Esca Bimbadgen Restaurant, Cafe, modern tasting rooms and an outdoor amphitheatre which hosts the renowned “A Day on the Green” concert season each year.
Senior Winemaker Sarah Crowe has selected only the finest parcels of fruit identified within renowned Shiraz growing regions to craft a premium wine of regional style and intensity of flavour. The fruit for this wine was grown on Bimbadgen’s two iconic Hunter Valley Vineyards, McDonalds Road and Palmers Lane Vineyard.
This Shiraz exhibits vibrant aromatics of ripe plum fruits, licorice and black pepper spice with an underlying perfume. The palate in complex with generous plum fruits interlaced with cedar and cigar box, silky but dominant structural tannins form the backbone of this age worthy Shiraz.
Deep purple in colour with beautiful florals and intense aromas of plum fruits and Christmas cake spices. Ripe plum fruits and sweet aromatic spices give the wine a generosity and plushness on the palate. Many fine tannins giving structure and backbone to the wine while encouraging a long length of flavor.
The fruit was destemmed and crushed to stainless steel tanks for a two day cold soak to ensure good colour extraction from the skins. Selected yeast strain was then added to start the fermentation process. The must was pumped over twice daily to mix the fermenting wine during the active fermentation phase and to gently extract colour and tannins from the skins and seeds. Gravity was utilized to transfer the must to the press and the skins dug out by hand. Once pressed the wine was transferred to a selection of new and old French oak barrels to complete malolactic fermentation. A rigorous barrel selection process 11 months later selected the best barrels to blend together.
A generous but soft wine to enjoy now that will reward patience and cellaring for up to 10 years.
