Capercaillie’s ambition is to remain a small winery which is focused entirely upon the creation of premium quality wines. To enhance the range of individual Hunter Valley Wines we select parcels of grapes from other proven regions of Australia, creating exciting multi-area blends which highlight climatic and varietal differences.

The Ghillie is made only in excellent years but always 100% Hunter Valley, and the fruit comes from a small parcel grown on a single vineyard in Pokolbin know as the Valley View Vineyard.
Relatively light colour; a classic Hunter style that, while seemingly light in body, will continue to develop over decades thanks to flawless balance and length. James Halliday’s Wine Companion 2010
Typically excellent medium bodied Hunter shiraz, with smooth, soft, ripe tannins and rounded palate. The aromas are of pepper, smoke and fresh tiled earth. A lovely drink now and for many more years. Drink now to 2027. Huon Hooke Sydney Morning Herald Good Living – April 12, 2011
The 35 year old vines produce fruit of consistently outstanding quality. Aromatic and vibrant in fruit profile with aromas of plum, mulberry, spice together with hints of leather. Medium bodied and savoury in style, this wine is fairly generous for this region which is indicative of the great vintage we had in 2007. A generous mid palate weight followed by a lingering finish.
